There is no point

There is no point in dieting.

I love food way too much.

Pareto’s 80-20 rule can be applied to just about anything: eat healthy 80% of the time and whatever you want 20% of the time.

There is no point to my blog.  

Unless you consider that since its conception it has slowly morphed into a place where I can work my issues out.

Free therapy in a public forum.

There is no point in arguing with people who’ve already made up their minds.

It’s a waste of time, don’t do it.

You just need to accept that the world is full of idiots and narcissistic assholes.

There is no point in taking yourself too seriously.

It makes for a boring existence, and life is already a bit mundane.

It’s okay to laugh at your idiocy.

There is no point in sticking to a perfectly mapped out plan.

No matter how much effort and time you put into creating a plan there is always something you’ll forget to consider or are unable to predict, namely human emotions.

Just let go.

There is no point in making sure that everyone around you is happy.

It’s just not realistic.

There will always be someone who is unhappy and it’s not your job to fix it or to make sure that everyone gets along.

Plateau No More

Caddy-for-Hire

In case you don’t recall, I’ve been trying to lose the 70+ pounds I gained during pregnancy.  After birth, around 30 pounds dropped rather quickly and I’m assuming it was all water since I was bloated and swollen like a dead whale ready to burst.  Anyway, after that it was a bit of a struggle to lose the weight with no time to exercise and my cravings for comfort food.

Fortunately, my mom has been helping out and I’ve been able to fit in some workouts here and there.  Also, I’ve been reevaluating the way I eat, and have started to eat more vegetables and less bread and rice.  Just so you know, there is no way in hell am I going to cut out the foods that I love, but I can at least slow down on the whole eating thing.  So, after about a two month plateau at 167 lbs, I’ve finally started to lose more weight.

Currently I’m at 160 pounds, and just have 15 more to go to reach my pre-pregnancy weight and 25 pounds to reach my goal weight.  It makes me happy to see the weight disappear.  I figured that it took me 9 months to pack it on, so it’ll take me 9 months to shed the weight off.  Right now I’m on month 5, so just 4 more months to go!  However, the holidays are quickly approaching and everyone knows how much I enjoy my holiday grub.

Losing It – Week 5

Nico and me.  Yes, I have no makeup on.  I only wear makeup when I’m going out which is rare nowadays.

What the F@#&?!?

On Monday I stepped onto the scale and was horrified.  It claimed that I gained five pounds, which I have a hard time believing.  Yes, I didn’t exercise much last week, but I feel and look thinner than I did the week before.

What the hell.

Anyway, Vic thinks the scale may be wrong and that I need to change the batteries.  Let’s hope he’s f@#&ing right.

Ugh.

Monday

So I did Yoga, and walked 2 miles.

Tuesday

Today I did Core Synergistics and walked 2 miles.

Wednesday

Today my mom left after staying with us for 3 months to help out with the baby. Let’s see how well I’ll keep up with my exercise with Vic being busy with school and his random side jobs.  Today I walked 3 miles, and only completed 30 minutes of the Kenpo video :(

Thursday

Just walked 2.5 miles today.  No time for any workout DVDs, thankfully this week we “rest” from the craziness that is P90X.

Friday

I walked 3.5 miles today, and have to admit that I’m already bored with the P90X workouts.  Maybe it’s the lean version I’m doing with all the Cardio, Core Synergistics and Kenpo going on.  I’m more of a free weights, pull-ups, push-ups kind of person and not so much a cardio person.  Hence, the reason why I’m walking and not running.  I hate running.

Saturday

We walked 2.5 miles today.

Sunday

Again, just walked 2.5 miles.  I’ll start back up with the P90X tomorrow.  I think I’m going to switch to the regular version which has more weight lifting.

STATS:

  • Starting weight: 178 lbs
  • Current weight:  172 lbs
  • Goal weight: 135 lbs
  • Pounds left to lose:  37 lbs

Ryan Apple Pie

For some reason I had over 20 apples in the vegetable drawer of my refrigerator.  I like apples a lot, but there’s no reason to have that many taking up valuable room in the fridge, especially now that I have a bounty of fresh veggies delivered to me each week.  So, I decided to make my family’s apple pie recipe for Easter.

Technically, the recipe comes from an old cookbook called, the Mennonite Community Cookbook, which my dad’s family gave to my mom when she first came to this country.  This was the first cookbook I learned to use, even though we’ve only actually cooked a couple recipes out of the book.  Anyway, here’s our adapted version of the Apple Crumb Pie.

Apple Crumb Pie (a.k.a. the Ryan Apple Pie)

6 apples (preferably tart, but I tend to use whatever I have on hand)

1 cup sugar (Turbinado or regular)

1/3 cup organic sweet cream butter (very cold and cut into cubes)

3/4 cup organic whole wheat flour

1 tsp cinnamon

Pastry for one 9 inch shell (I am unable to make a nice, flaky pie shell, so I buy the Marie Calendar’s shells from the freezer section and always end up making two pies at a time.)

Preheat oven to 425 degrees.

 

Pare apples and cut into eighths, put in a medium sized bowl.  Sprinkle 1/2 cup sugar and cinnamon over apples and mix until well coated.  Put apple mix into unbaked pastry shell.

 

Combine remaining sugar and flour into a mini food prep or large food processor.  Pulse until well mixed.  Next, add cubes of cold butter and pulse until crumbs are formed.  Sprinkle crumbs over apples.

Bake the pie at 425 degrees for 10 minutes, and then reduce temp to 350 degrees.  Bake for 35-60 minutes, depending on how done you like your apples. We like them nice and soft, so we bake the pie for 60 minutes.

Let it cool for a few hours, then slice and serve.  Eat at room temperature or reheat it.  Eat it a la carte, serve with ice cream or whipped cream, or put the pie in a bowl and pour milk over it and eat it like cereal (this is what my dad likes to do for breakfast when we have leftover pie).

(P.S.  For some reason I don’t know how to use my camera and there are date stamps on my pictures with the incorrect date!  Luckily I figured how to fix it, but of course by then the apple pie was made and gobbled up.  Lame.)

Black & Tan Cupcakes

I’m hungry for all things sweet, but I must resist.  One day I will make these cupcakes I found on Babble.com, hopefully when I’m nice and skinny and not pregnant.

Black & Tan Cupcakes

1/2 cup butter
1 cup Guinness or other dark stout
1 1/2 cups sugar
3/4 cup cocoa
1 cup sour cream
2 large eggs
1 tsp. vanilla
2 cups all-purpose flour
2 tsp. baking soda
1/4 tsp. salt

Guinness frosting:
1/2 cup butter, softened
3 cups confectioners’ sugar
1/4-1/3 cup Guinness

In a small saucepan, melt the butter with the Guinness over medium heat; remove from heat, pour into a bowl and whisk in sugar and cocoa. Whisk in the sour cream, eggs and vanilla. Stir in the flour, baking soda and salt just until blended. Divide the batter between paper-lined cupcake tins and bake in a preheated 350°F oven for 20-25 minutes, until tops are springy to the touch.

To make the frosting, beat the butter, confectioners’ sugar and Guinness until you have a spreadable frosting. Wait until the cupcakes have cooled completely before frosting.

 

Breakfast of Champions

I grew up eating fried rice and eggs for breakfast every weekend.  Sometimes we even ate it for dinner since it’s a quick meal to make with leftover rice.  So, it was no surprise when I woke up this morning craving for some comfort food (a.k.a. fried rice and eggs).  I know this picture of my breakfast isn’t the greatest, you can blame it on my iPhone and my lack of composition skills, but damn it was mighty tasty.  But that’s all that really counts, right?

Japanese Munchies

Victor came home from his mom’s with a bag of these wasabi puffs.  I love how the Japanese bags of junk food come colorfully illustrated.  Makes me want to eat them, which I did.  Thankfully I didn’t eat the whole bag.
