Plateau No More

Caddy-for-Hire

In case you don’t recall, I’ve been trying to lose the 70+ pounds I gained during pregnancy.  After birth, around 30 pounds dropped rather quickly and I’m assuming it was all water since I was bloated and swollen like a dead whale ready to burst.  Anyway, after that it was a bit of a struggle to lose the weight with no time to exercise and my cravings for comfort food.

Fortunately, my mom has been helping out and I’ve been able to fit in some workouts here and there.  Also, I’ve been reevaluating the way I eat, and have started to eat more vegetables and less bread and rice.  Just so you know, there is no way in hell am I going to cut out the foods that I love, but I can at least slow down on the whole eating thing.  So, after about a two month plateau at 167 lbs, I’ve finally started to lose more weight.

Currently I’m at 160 pounds, and just have 15 more to go to reach my pre-pregnancy weight and 25 pounds to reach my goal weight.  It makes me happy to see the weight disappear.  I figured that it took me 9 months to pack it on, so it’ll take me 9 months to shed the weight off.  Right now I’m on month 5, so just 4 more months to go!  However, the holidays are quickly approaching and everyone knows how much I enjoy my holiday grub.

Losing It – Week 5

Nico and me.  Yes, I have no makeup on.  I only wear makeup when I’m going out which is rare nowadays.

What the F@#&?!?

On Monday I stepped onto the scale and was horrified.  It claimed that I gained five pounds, which I have a hard time believing.  Yes, I didn’t exercise much last week, but I feel and look thinner than I did the week before.

What the hell.

Anyway, Vic thinks the scale may be wrong and that I need to change the batteries.  Let’s hope he’s f@#&ing right.

Ugh.

Monday

So I did Yoga, and walked 2 miles.

Tuesday

Today I did Core Synergistics and walked 2 miles.

Wednesday

Today my mom left after staying with us for 3 months to help out with the baby. Let’s see how well I’ll keep up with my exercise with Vic being busy with school and his random side jobs.  Today I walked 3 miles, and only completed 30 minutes of the Kenpo video :(

Thursday

Just walked 2.5 miles today.  No time for any workout DVDs, thankfully this week we “rest” from the craziness that is P90X.

Friday

I walked 3.5 miles today, and have to admit that I’m already bored with the P90X workouts.  Maybe it’s the lean version I’m doing with all the Cardio, Core Synergistics and Kenpo going on.  I’m more of a free weights, pull-ups, push-ups kind of person and not so much a cardio person.  Hence, the reason why I’m walking and not running.  I hate running.

Saturday

We walked 2.5 miles today.

Sunday

Again, just walked 2.5 miles.  I’ll start back up with the P90X tomorrow.  I think I’m going to switch to the regular version which has more weight lifting.

Losing It – Week 3

Happy Labor Day!

I’ve been eating real good this weekend, and when I say good, I mean steaks, tri-tip, BBQ chicken, potato salad, rice, fresh corn, vine ripened tomatoes, etc. So, I’m totally hoping this “good eating” has not wreaked havoc on my weight.

Yeah, anyway, let’s get back on track.

Earlier this week I developed a sore throat and skipped a few workouts in order to recuperate.  I’m not entirely sure if my sore throat was due to me getting sick or if my allergies were acting up.  It’s really hard to tell sometimes, but seeing that I never developed a fever, it probably was just allergies. So, I erred on the side of caution and was lucky to have my mom here to help take care of the baby.

Monday

Today I walked about 2 miles, but was too exhausted to workout. Instead I took a 2 hr nap & I got to sleep in today. Thank you mom for helping out & watching the kid! I think I’m getting sick.

Tuesday

Today we walked 1.5 miles and I did Yoga X. I can tell I’m getting stronger, but I still can’t do crane. Looking forward to the rest of the week. Hope everyone else is doing well!

Wednesday

Ok, so I got sick and took a day off.  Sore throat sucks, and I don’t want to get the baby sick.  He’s not yet 3 months, and I’d hate for him to get what I have. Luckily my mom is still here to help take care of the baby.

Thursday

Still have a sore throat, but decided to do P90X while my mom was still here. Today I did Legs & Back with Ab Ripper X and walked 2 miles.  I’m starting to think my sore throat is caused by my allergies.

Friday

Today I did Kenpo X and walked 2 miles.  Unfortunately, I still have a sore throat.  I’m glad the baby hasn’t gotten it yet, which really makes me think it’s my allergies.  It’s so hard to tell sometimes.

Saturday

Did Core Synergistics and walked 2 miles with the dogs.  Throat isn’t sore anymore, just scratchy.  I hope I don’t get a cough.

Sunday

I did the Cardio X today and walked 2 miles. My throat is still scratchy, and I have much more energy despite my nose running like crazy.  Hopefully these allergies (yes, I’ve concluded I’m not sick) will go away soon!

STATS:

I seem to be losing about 2 pounds a week, which is quite consistent and not too drastic.  I think I remember reading about how losing 2-4 pounds a week is healthy and helps ensure that you won’t rapidly gain it back like those who lose weight quickly.  
Alrighty, now let’s hope this week will be a bit more successful both in regards to exercise and food!

Losing It – Week 2

Ok, so this past week I was bad, but whatever.  I’m not going to be hard on myself about it, and I’m not giving up because I didn’t workout 6 days in a row. There’s no law that says I must do things exactly so.

Monday

I didn’t get a chance to do P90X today, but I did walk 3 miles with the kid and the dogs.

Tuesday

Today I only walked a mile with the dogs.  Really feeling lazy for some reason.

Wednesday

I’ve been very bad this week. Did not do any P90X so far, and only walked a mile today. Hopefully I’ll be back on track by Friday. My energy level has definitely dropped. It’s amazing how quickly that can happen after only a few days of not exercising.

Thursday

Finished Core Synergistics just now, and walked 3.5 miles earlier today. Feels good to be back in the game!

Friday

Walked 2.5 miles & completed the P90X Cardio. Hopefully I’ll be able to find time this weekend to fit in a workout. Hope you all have a great weekend!

Saturday

Did Shoulders and Arms followed by Ab Ripper X today.  I also upped my weights from 5 lbs to 7 lbs, and I’m thinking that may still be too light.  Thank you baby Nico for giving me strong arms!

Sunday

This afternoon, I had my book club meeting in Santa Barbara (we discussed “The Help” and then watched the movie), so I didn’t do any type of exercise except walk my dog really slow (it was too hot for her).  I think we walked about a mile. Also, I think I did pretty good with my food selection at the book club meeting.  Had a small black bean quesadilla and iced tea at CPK, and no popcorn or Icee or candy at the movies!  Yay, me.

STATS:

  • Starting weight: 178 lbs
  • Current weight:  174 lbs
  • Goal weight: 135 lbs
  • Pounds left to lose:  39 lbs
Despite not working out for four days, I still lost two pounds.  Must be the extra muscle burning calories while I did nothing, or me watching what I eat & drink.  I did give away all the beer in my fridge to a friend who came by to visit!  Oh, how I’ll miss drinking a Guinness on my official rest day.

Nước Mắm

Over the past few months, I’ve kept hearing about this new brand of nước mắm, Red Boat Fish Sauce, that’s imported from Phú-Quốc Island in Vietnam. The majority of  nước mắm that we get here in the U.S. is either from Thailand or Hong Kong.  These versions are diluted with water and contains preservatives and MSG, while Red Boat is an “all-natural, first press, ‘extra virgin’ Vietnamese fish sauce.” This means that the only ingredients are anchovies and salt, and that makes me extremely happy.

I’ve always tried to stay away from foods that contain preservatives in my attempt to live healthier, and recently, to lose weight.  Being half Vietnamese, and having my mom live with me for the first three months of my baby’s life, it has been very hard to not consume quite a bit of the heavily diluted, preservative laden nước mắm.  So, recently my mom and I decided to order a few bottles of Red Boat Fish Sauce online since the closest store* that carries the product is an hour and a half away.

Once our shipment of five bottles came in, we opened one up to take a good whiff and noticed that it was not as pungent and fishy smelling as the other brands.  After an initial comparison taste test between Red Boat and the other nước mắms we had in our cabinet, we concluded that Red Boat, with its well-rounded depth of flavor, was by far more superior than the others.  It will definitely become a staple in our household, as well as my mom’s and aunts’, whom we gifted the remaining bottles to.

Yesterday, I decided to devote the majority of my food posts to my cousin, James, who loves to eat like the rest of our family, but for some odd reason did not inherit our cooking gene.  He needs to learn how to make the basics if he wants to survive on something other than instant ramen and Taco Bell, especially now that he’s about to graduate from college and enter the so called “real world.” So, here are a few recipes that he, as well as the rest of you, can make that uses nước mắm.

Nước Chấm 1

  • 1 tbs Red Boat Fish Sauce (or any other fish sauce you may have on hand)
  • 1 1/2 tbs sugar
  • 1 bird’s eye chili

Coarsely crush the chili in a bowl, and add the fish sauce and sugar.  Stir well until nice an syrupy.  Dip sour green fruits, like green mango, papaya, or apples in the sauce and enjoy as a snack.

Nước Chấm 2

  • 1 cup Red Boat Fish Sauce
  • 2 cups water
  • 1 cup sugar
  • 1/4 cup lime juice
  • 2 tbs minced garlic
  • 2 bird’s eye chili, chopped or 2 tbs of Tương Ớt (ground garlic chili pepper paste, see recipe below)

Combine ingredients into a small sauce pan and heat until boiling.  Let sauce cool to room temperature before serving.  Leftovers can be stored in an airtight container in the refrigerator for 2 weeks.  If you do not cook the sauce, you should enjoy it immediately.

Optional additions:

  • Finely diced ginger (makes a great dipping sauce for fish)
  • Shredded carrots, jicama, and/or daikon radish (good dipping sauce for Chả Giò)

 Tương Ớt

  • 2 cups of bird’s eye chili (serrano or jalapeno peppers work well in this recipe too!)
  • 1/4 cup sugar
  • 3 tbs vinegar
  • 1 head of garlic
  • 2 tbs Red Boat Fish Sauce
Put all ingredients into a blender or food processor.  Grind until well combined.  Store the garlic chili paste in an airtight container in the refrigerator.  You can also cook or freeze the paste to store longer.

Chả Giò
  • 1 lb ground pork
  • 1 lb shrimp and/or crab meat, minced
  • 2 carrots, shredded
  • 1 whole onion, finely diced
  • 1 bunch green onions, finely diced
  • 1 egg
  • 1 tbs sugar
  • 2 tbs Red Boat fish sauce
  • 1 tbs ground pepper
  • 1 large jicama, shredded (optional)
  • Package of rice paper for frying or egg roll wrapper.
  • Oil
Add all ingredients into a large bowl.  Mix with gloved or cleaned hands until well combined.  Roll a large heaping tbs or two in rice paper or egg roll wrapper.  Fry in 1/2 inch of oil on medium heat until golden brown on all sides.  Place on a rack to slightly cool before serving with Nước Chấm, lettuce, and fresh Vietnamese herbs. Clean or replace oil frequently when cooking a new batch.

 

*Note – You Bay Area people are lucky since there are a plethora of stores you can easily purchase Red Boat Fish Sauce from, perhaps it’s because the owners are from San Jose.  Hopefully more stores in Southern California will start carrying this brand.

 

Losin’ It – Week 1

Alright, week one of working out is done and I feel good.  My energy level has increased significantly, I’m sleeping better, and my skin looks clearer.  Let’s hope I can keep this up!

The following are my posts about my workouts.  I belong to a support group on Facebook with other moms that are trying to get back into shape.

Monday – Core Synergistics

It’s been almost a year since I worked out this hard, and I was literally sweating buckets this afternoon. I’m also trying to walk 2-3 miles a day since I’m not in running shape yet. I must admit, it totally feels good to get back into an exercise routine. Oh, and I also had a shake to replace one of my meals. We’ll see how that goes since I do enjoy my food.

Tuesday – Cardio X

Today was week 1, day 2 of P90X Lean. I did the Cardio X workout and walked 3 miles. I replaced one meal with a shake, and am feeling good – not too full, not starving. Looking forward to tomorrow.

Wednesday – Shoulders & Arms, Ab Ripper X

I realized that I no longer have a strong core like when I regularly did Pilates. Some of those Ab exercises I couldn’t even do, which was quite depressing. Also, I think I need to up my weights for my arms. I guess I’m stronger than I originally thought. Must be all the baby picking up & carrying going on. I walked 2.5 miles as well.

Thursday – Yoga X

It’s been a while since yoga has made me sweat like a pig, and I’ve declared crane to be my enemy. I’m not a fan of the workout’s flow of movements.  It seems disjointed to me. Anyway, we walked about 2 miles today.

Friday – Legs & Back, Ab Ripper X

I don’t have a pull up bar and couldn’t find a place in my house to use my resistance band, so I faked the pull ups with weights. Do any of you have a pull up bar? Is it worth it to get one? Still replacing one meal with a shake. Not doing the Shakeology thing, just the normal protein shake. I’m using Designer Whey and buy it from TJ’s. I’m also juicing as one of my snacks.  Today we walked almost 3 miles.

Saturday – Kenpo X

Week 1 of P90X is done! Yay! However, I think I overdid it today with the Kenpo X. I overheated and got nauseous. Not a good thing. Anyway, all is better and am looking forward to relaxing tomorrow.  Another 2.5 miles of walking today.

Sunday – Relax

I walked 2 miles and ate moderately.  No shake, but I did have a carrot/beet/apple juice for a snack. And, I enjoyed a Guinness for dessert this evening :)

Baby steps!  Losing 2 pounds is better than gaining it, plus muscle weighs more than fat and I definitely feel thinner than last week.

Carrot Cake Muffins

Last week I harvested all of the carrots, turnips, and parsnips in my garden in order to get the beds ready for the next planting.  Needless to say, I had a sh*t load of carrots I wanted to use soon since I didn’t have much room in my fridge, so I decided to make some carrot cake muffins for Easter and my dad’s camping trip to Death Valley.  As always, I was inspired by the Carrot Cake Muffin recipe by Martha Rose Shulman who writes Recipes for Health for the New York Times.  Enjoy!

Carrot Cake Muffins (makes about 12)

2 1/2 cups organic whole wheat flour

2 tsp baking powder

1 tsp baking soda

2 tsp ground cinnamon

1 tsp fresh ground nutmeg

1/2 tsp ground allspice

1/2 tsp ground cloves

1/2 tsp Celtic salt

2 farm fresh eggs

1/2 cup turbinado sugar

1/3 cup extra virgin olive oil (or whatever vegetable oil you have on hand)

1 1/3 cups organic whole milk

1 tsp organic vanilla extract

2/3 cup of sliced almonds

2 cups of grated carrots

Preheat oven to 375 degrees.  Grease muffin tins.

Mix dry ingredients together in a medium bowl.  Mix wet ingredients and the sugar together in a large bowl.  Add dry ingredients to wet ingredients and mix until well combined.  Fold in the almonds and the carrots.

Spoon into greased muffin tins and bake for 25 minutes or until a toothpick comes out clean.

Pumpkin Waffles

Since I still had a cup of pumpkin puree leftover from the muffins that I made the other day, I decided to make some pumpkin waffles.  It was dinner time when I decided to do this, so I figured I could just freeze and reheat them in the toaster for future lazy breakfasts.  Here’s my version of the Weelicious Pumpkin Waffles.

Pumpkin Waffles (makes 12 waffles)

2 ¼ cups organic whole wheat flour

¼ cup flax meal

1/3 cup Turbinado sugar

2 ½ tsp baking powder

1 tsp baking soda

½ tsp Celtic salt

2 tsp ground cinnamon

1 tsp ground ginger

4 eggs

2 cups organic whole milk

1 cup (or so) pumpkin puree

6 tbsp melted organic sweet cream butter

1 tsp pure vanilla extract

Preheat waffle iron.  Mix the dry ingredients together in a medium bowl.  Mix the wet ingredients together in a large bowl.  Add the dry ingredients to the wet ingredients until smooth.  Pour about ½ of the batter into heated waffle iron.  Cook according to your waffle maker’s specifications.  Eat with butter and syrup, or cool to room temperature and then freeze for later use.  Reheat waffles in toaster or oven.

Somewhat Healthy Banana Nut Muffins

I have a large collection of cookbooks as well as a binder full of collected recipes; however, I hate making a recipe exactly how it is written.  This is due to the fact that I despise going to the grocery store to buy specific ingredients to make a particular dish.  Instead, I like to use ingredients that I have on hand to make something I’m hungry for.  So, here’s my highly modified, somewhat healthy, banana nut muffin recipe that I made on Sunday.

Unfortunately, in the middle of baking, the power went out in my neighborhood  and shut off my oven.  Luckily the muffins had just finished cooking when the power went out.  The gods must love banana nut muffins.

Makes 6 jumbo muffins or 12 mini muffins.

1 1/2 cup Whole Wheat Flour

1/2 cup Turbinado sugar

1/4 cup rolled oats

2 Tbls Flax meal

1 tsp Cinammon

2 tsp Baking Powder

1/2 tsp salt

3 overly ripe mashed bananas

2/3 cup heavy whipping cream (this is the not so healthy part)

1 large egg

2 Tbls extra virgin olive oil or whatever vegetable oil you like or have on hand

1 tsp Vanilla extract

1/2 cup or more of chopped walnuts

Preheat oven to 400 degrees.  Mix the dry ingredients in a medium sized bowl. Then, mix the wet ingredients in a large bowl.  Add the dry ingredients and walnuts to wet ingredients.  Mix until comes together.  Spoon evenly into greased or lined muffin tins.  Bake for 20 minutes or until a toothpick inserted in the center of a muffin comes out nice and clean.  Muffins should be golden brown.

Farmer Fresh to You

 

Last summer, I joined a CSA called Join the Farm that’s located here in Oxnard.  The produce was great, the staff was friendly, but by the end of the summer I was sick and tired of eating kale and spaghetti squash.  In addition to my family being tired of eating the same thing, it was also bothersome how much food was in each box.  There was way too much for my small family to consume unless we all decided to go vegan which will never, ever happen.  I guess I could have gotten a box every other week rather than weekly, or shared with another family, but by the time we realized it was too much the season and my subscription was already over.

Produce from Join the Farm

So, you can probably understand why I got really excited the other day when my friend posted a link to Farmer Fresh to You on facebook. It’s a small company based in Camarillo that delivers local organic produce to your door. What’s so great about them is that their produce comes from a variety of local farmers, you can choose the size of the box you want delivered and what fruits & veggies you want in it, and you can also order other local organic products such as eggs, honey, bread, and more.  Oh, and did I mention that they deliver to your house free of charge?  Yeah, totally cool, and totally great for lazy pregnant people like me who hate going to the grocery store and who forget to wake up to go to the farmer’s market.

Anyway, as soon as I checked out the website I ordered a small box of mixed fruits and vegetables, and on Wednesday I received my first shipment.  I had forgotten what I ordered so it was quite exciting to see what was inside, and for some reason I didn’t remember to take a picture of all the produce (must be the Third Trimester Stupids).  However, I did take a picture of the baby yellow squash, tomatoes, and spinach I sauteed for my chicken soft tacos I made later that day.

All in all, I think Farmer Fresh to You is a great little company that I’ll continue to utilize for the time being.  However, next time I’ll order either a medium or large box to last me 2 weeks rather than one, and save some much needed dinero in the process.
